While you’d think meatloaf would naturally be pretty keto-friendly, it can pack hidden carbs! So I wanted to create a low-carb, keto meatloaf recipe to enjoy all season long! This meatloaf without breadcrumbs is only 1 net carb, super easy to make and a family favorite!
What are the basic ingredients for meatloaf?
A traditional meatloaf recipe contains ground beef, bread crumbs, eggs, ketchup and salt. For our Keto Meatloaf recipe, we used ground beef, an egg, flax seed meal and yeast to keep it low carb. We also used seasonings to give this recipe lots of flavor!!
Can you have ketchup on keto?
Typically ketchup contains too many sugars and carbs for a keto or low-carb diet. If you’d like a lower carb option, look for a sugar-free ketchup or make your own sugar-free ketchup. Either of these options won’t ruin your progress on a keto diet.
Can you eat hamburger on the keto diet?
Yes, you can have hamburger, as well as, meats like venison and lamb on a keto diet. Most of these meats contain zero net grams of carbs for 5 ounces. Chicken and salmon are also great low carb, high protein options.
4 Super Easy Keto Meatloaf Tips
While our keto meatloaf recipe is super easy to make, we want to help you make dinner perfect with a few tips!
1. Wait 5-10 Minutes to Slice Your Keto Meatloaf
This recipe can be really tender so it might be hard to slice at first. We suggest letting it cool for 5 to 10 minutes before slicing with a sharp, serrated bread knife.
2. Don’t Overthink It
You want to mix the ingredients together and then make it into a loaf pretty quickly. This will help the meat stick together and keep the texture right. If you over work the meat, it can fall apart easier.
3. Choose a 85/15 or 80/20 Ground Beef
Normally, we choose a super lean ground beef, but with this keto meatloaf recipe it’s better to choose a higher fat option. It offers a better taste and holds its shape better.
4. Let it Rest for 5-10 minutes.
We mentioned letting the loaf cool 5-10 minutes will help you slice it, but it also allows the juices to redistribute and firm up.
Can You Make This Meatloaf Ahead of Time?
Yes! You can make this meatloaf in advance or enjoy leftovers for a few days! We recommend wrapping it up tightly in plastic so it doesn’t oxidize and keep it in the refrigerator. You can also freeze it!
What about leftover keto meatloaf?
You can eat on leftover keto meatloaf for a few days after you make it. We actually love how it settles and tastes on the 2nd day!
We wrap it up tightly in plastic or put into an airtight container and eat on it 2-3 days after making it. We just microwave it, but you could also slice a piece and fry it on the stove in a little extra-virgin olive oil.
How to Reheat Meatloaf Without Drying It Out
You can reheat meatloaf in the oven or microwave.
Reheat Meatloaf in the Oven
- Preheat your oven 250 degrees F.
- Place your meatloaf in an oven-safe dish with 1-2Tbsp beef broth or water to keep it from drying out. Cover with aluminum foil.
- Heat for 20 minutes or until meatloaf is warm through.
Reheat Meatloaf in the Microwave
If you’re in a hurry, you can reheat meatloaf in the microwave by:

- Microwave for 60-90 seconds.
- Remove from microwave, flip slices if possible.
- Place it back in the microwave and heat for another minute or 2 or until the meatloaf is warm through.

Ingredients You’ll Need:
- 2 pounds ground beef, mixture of other ground meat
- 1 egg
- 2 teaspoons dried onion powder
- 1 teaspoon dried garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 Tablespoons nutritional yeast
- 1/4 cup ground flax seed
How to Make Low Carb Meatloaf
- First start by preheating the oven to 400 degrees Fahrenheit.
- Then combine all of the ingredients listed above into a bowl. You’ll want to mix this well.
- Now, you’re ready to place the mixture into a greased loaf pan and press into a loaf shape.
- Then, bake it for 25-30 minutes and allow it to cool for 5 minutes before removing from the pan and slicing.
- You can also top with a little sugar-free ketchup if you want to!
