You only need a few simple ingredients to make these buffalo pinwheels!
What You’ll Need:
- 12 oz canned chicken breast, drained
- 1 Cup Frank’s Hot Sauce or Your Favorite Buffalo Sauce
- 2 Cups Mexican Blend Cheese (divided)
- 8oz cream cheese, room temperature
- 8 Soft flour tortillas
- 3 tbsp butter, melted
How to Make Buffalo Chicken Pinwheels
1. In a medium mixing bowl, combine the shredded chicken, buffalo sauce, 1 cup of cheese, and the cream cheese. Mix with a hand mixer.
2. Spread a thin layer of the chicken mixture onto the soft tortillas, top with shredded cheese, roll up.
3. Top with a little melted butter and cut into smaller pieces.
4. Pop in the air fryer at 400 degrees for 6 minutes. They should be golden brown.
5. Repeat until the mixture is gone.
We like to dip them in ranch dressing or blue cheese dressing! Both are great — it just comes down to personal preference. You could even have multiple dipping sauces set up for a game day party or get together!
Ways to Vary These Easy Buffalo Chicken Roll Ups
We used 1 cup of the shredded cheese in the buffalo chicken filling and then used the other cup to sprinkle on top of the mixture before rolling.
You could also use cooked chicken breasts (shredded) or leftover rotisserie chicken for these easy buffalo chicken rolls! Another option is to use cheddar cheese.
Another customization would be to use Monterey Jack or Cheddar cheese instead of the Mexican cheese blend we used. If you wanted to get fancy, you could do blue cheese crumbles, too!
If you have any leftover buffalo chicken mixture, it’s also a great dip! We like it for tortilla chips!
How long will these buffalo chicken tortilla roll ups last?
We recommend leaving them out at room temperature no more than an hour or two, but you can store any leftover chicken pinwheels in an airtight container in the refrigerator for 3 to 5 days.
