This keto cookie recipe is super simple to make, and the cookies are so soft, dense and satisfying! Each cookie is around 100 calories and 1 net carb, and you don’t even need to use almond flour!
All you need is natural peanut butter, 1 egg and Swerve confectioners sugar!

We really wanted to create a cookie recipe that required no flour or sugar. Our reasoning was that we wanted anyone to be able to enjoy the recipe whether they were following a low-sugar, keto, or low-carb diet.
How Do You Make Peanut Butter Cookies Crispy?
One way to make your keto peanut butter cookies crispy is to add in chopped peanuts!
Without the nuts, the cookies taste a lot like a sweet peanut butter, and adding in the chopped peanuts just gives the texture a change.
What peanut butter can you have on keto?
You can have all natural peanut butter on a low carb diet, but you want to check the label first since some brands contain a lot of sugar.
Typically, you can find a brand with a moderate amount of protein and relatively high fiber to help balance out the carbs.

Choosing a Natural Peanut Butter
You want to look for a brand that contains just peanuts and salt.
We’re assuming our nutrition calculation that your peanut butter has 4g net carbs per serving.
Can I use PB2 or Powered Peanut Butter Instead?
We haven’t had any luck using a powered peanut butter to make keto peanut butter cookies. So we don’t recommend it.
What Sweetened Should You Use for Keto Peanut Butter Cookies?
We use Swerve’s Confectioners Sugar because it’s sugar-free, low carb, and keto-friendly.
You could also use Truvia or monk fruit sweeteners as well.
We prefer a powdered sugar for this recipe though.
Can You Use Protein Powder in This Recipe?
We don’t recommend using protein powder in this recipe.
Many protein powders contain hidden sugars, and the powder can also make the cookies really dry.
Do you have to use an egg in this recipe?
Yup, you have to use the egg in this keto cookie recipe. It’s what holds the dough together.

How To Make Keto Peanut Butter Cookies
The low carb peanut butter cookies are super simple to make! You’ll love how soft and slightly chewy each bite is, and they’re so easy to bake that you could keep them in your meal rotation!!
First, you want to pre-heat your oven to 350 degrees. Then, mix together your peanut butter, sugar and raw egg.
Now, you just form them into balls and place on a cookie sheet.
The last step is to smush the top with a fork to make the famous peanut butter cookie mark.
Let them bake 10 minutes and set to cool before enjoying!

- 1 Cup Natural Peanut Butter
- 1/2 C Swerve Confectioners Sugar
- 1 Egg
Instructions
- pre-heat oven to 350
- mix peanut butter, sugar, and egg together
- form into small balls...makes approximately 12 to 15 1" balls.
- place on a non-stick cookie sheet or cookie sheet lined with parchment paper
- smush top with a fork to get the famous peanut butter cookie mark
- Bake for 10 minutes and set to cool
