Our Mason Jar Strawberry Spinach Salad with Walnuts and Rotisserie Chicken packs in lots of fruits, veggies, fiber, healthy fats, and protein! It also is a party favorite!! We just triple or quadruple the recipe for parties and get-togethers!
What do you need to make this Paleo Strawberry Spinach Salad?
Our Paleo Strawberry Spinach Salad uses spinach, blueberries, strawberries, onion, walnuts and rotisserie chicken! You could also use leftover chicken.
If you have a mason jar handy, you can even make this salad in a mason jar!
What dressing goes on a Paleo Strawberry Spinach Salad?
You can always look for a store-bought balsamic vinaigrette or strawberry vinaigrette! If you’re following a paleo or Whole 30 diet, make sure to check the ingredients on store-bought brands.
You can also make a strawberry vinaigrette for your salad as well! It’s as easy as blending a few ingredients together!
To Make a Strawberry Vinaigrette
- 5 medium strawberries sliced in half
- 1/4 cup olive oil
- 2 Tbsp. champagne vinegar
- 2 Tbsp. lemon juice
- 2 tsp. honey (leave out for the Whole30)
- Mix together all of the ingredients above in a small food processor and blend until smooth.
Whether you buy a dressing or make one, you’re sure to love this Summer salad!
How to Meal Prep a Mason Jar Salad
Using mason jars allows you to meal prep salads for the week without them getting soggy.
You just want to skip the dressing and layer your salad like this:
- Hard vegetables (like onion, carrots, tomatoes)
- Crunchy or Hard Toppings (your walnuts)
- Protein (your chicken)
- Greens (spinach, spring mix, etc)
- Soft Toppings (cheese, dried fruit, etc)
Starting with the hard vegetables on the bottom and finishing with the softer ingredients on top will help your salad last longer. When you’re ready to enjoy, add in your dressing and shake!
How long does this mason jar salad last?
Since we’re using leftover or rotisserie chicken, I like to eat this paleo Strawberry Spinach Salad with Walnuts salad within 3 days of making it.
Other mason jar salads can last up to 5 days though!

While I buy glass mason jars, I usually get plastic lids because they’re tighter than metal ones.

Our Strawberry Spinach Salad with Walnuts and Rotisserie Chicken packs summer into a mason jar, and it's gluten-free, paleo, and Whole 30 friendly!
Ingredients
- 1 cup leftover chicken
- 2 cups spinach salad mix
- 1/2 cup blueberries
- 1/2 cup strawberries
- 4 slices red onion
- 1/3 cup chopped walnuts
To Make a Strawberry Vinaigrette
- 5 medium strawberries sliced in half
- 1/4 cup olive oil
- 2 Tbsp. champagne vinegar
- 2 Tbsp. lemon juice
- 2 tsp. honey (leave out for the Whole30)
- Mix together all of the ingredients above in a small food processor and blend until smooth.
Instructions
- If you're using a mason jar, place your walnuts and onion in first.
- Then place your chicken, strawberries, and blueberries into the jar.
- Top with your spinach salad mix.
- Add in your dressing of your choice when you're ready to eat.
Notes
You can always use a store-bought vinaigrette, but you can also make your own dressing as well.
To make this mason jar salad recipe vegetarian-friendly, you could skip the chicken and use another protein instead. You could try hard boiled eggs, baked tofu, or chickpeas for example.
