This one sheet pan chicken dinner is full of flavor and ready in just 30 minutes! We use garlic and lemon to season the chicken, and it’s all it really needs!
Plus, the clean-up is so simple because everything is on this one pan!
What other vegetables could I use in this recipe?
You can really use a variety of vegetables for our one sheet pan garlic and lemon chicken. So if you don’t have green beans or red potatoes on hand, you can still follow this sheet pan recipe.
Some good vegetables to use with our garlic and lemon chicken are:
- broccoli
- asparagus
- zucchini
- brussel sprouts
- snow peas
- eggplant
- onions chopped up in large pieces
You could also use yellow or sweet potatoes or a winter squash like butternut squash instead of the red potatoes.
Can you cook chicken and veggies in the same pan?

Can I bake chicken in a metal pan?
Yes! We used a sheet pan for this recipe because it’s durable and easy to clean.
You could also use a cookie sheet, but we prefer a sheet pan because it has edges to keep the vegetables and potatoes from rolling off.
How long does it take to bake a chicken breast?
It depends on the size of the breast and the temperature of your oven.
Typically, a 4-oz chicken breast bakes in 25-30 minutes at 350ĖF and for about 15-18 minutes at 425ĖF .
Since we’re baking multiple chicken breasts and vegetables for this recipe, we recommend baking everything for 30 minutes at 425ĖF.
How To Bake Chicken In The Oven
For this recipe, you’ll want to preheat the oven to 425ĖF and lightly spray the sheet pan with non-stick cooking pray.
Then, you’ll lay the chicken flat on the pan, side-by-side.
Next, we cover the chicken with lemon, garlic, salt, and pepper evenly. You can also add in a little butter to each chicken breast if you’d like.
Then, you’ll bake the chicken (with or without vegetables – your choice) for 30 minutes.
The chicken should be cooked through with no pink in the middle and have an internal temperature of 165ĖF.
Can I make this with frozen chicken breasts?
Yes – you’ll just want to let them thaw either over night in the refrigerator or defrost them using a microwave before baking it.
Are you asking, “Is this chicken done?”
If you’re wondering if your chicken is cooked through, you can always check it with a meat thermometer. It should have an internal temperature of 165ĖF.
While you could go purely on appearance, the outside of the chicken can be deceiving. A good meat thermometer is affordable and such a quick and easy hack to make sure your chicken is cooked through!

One Pan Chicken Green Beans and Potatoes Baked with Lemon and Garlic
One of our favorite dinners is thisĀ One Sheet Pan Chicken Green Beans and Potatoes with garlic and lemon! We love that it's so healthy, quick and easy to make, and our family loves how delicious and juicy it is!
Ingredients
- 4 Chicken Breasts
- āØ2 cups Green BeansāØ
- 2 Large Red Potatoes
- āØ2 tbsp ButterāØ
- 1 Lemon
- āØ2 tbsp Minced GarlicāØ
- Salt & Pepper to Taste
Instructions
- Preheat oven to 425˚F and prepare a sheet pan by lightly spraying it with non-stick cooking spray.
- Lay chicken breasts flat on the sheet pan, side by side.
- Cut the ends of the green beans off and break in half, if desired.
- Place green beans onto sheet pan surrounding the chicken breasts.
- Dice the potatoes and place onto the sheet pan on top of and among the green beans.
- Spread lemon, garlic, salt and pepper over the chicken breasts evenly.
- Cut butter into 4 pats and spread evenly over the chicken.
- Place sheet pan in the oven and bake for 30 minutes.
- Remove from the oven and serve immediately.
Notes
You can always substitute in your favorite hearty vegetables instead of the green beans. We like to use asparagus, zucchini, eggplant, brussel sprouts, or snow peas.
You could also swap the red potatoes for 2 medium yellow potatoes, sweet potatoes, or a winter squash like butternut squash.
The cooking time and temperature would remain the same.

I want to make this for Valentine’s – do u think can I use bone-in chicken thighs instead of chicken breasts? tysm

Hey Cindy! Absolutely! Your cooking time may go up a little bit because bone-in chicken takes longer to bake. You may need to bake it about 3 to 4 minutes extra minutes, but you can absolutely use chicken thighs instead. We love the flavor that they offer too!
